Easy Spicy Chicken Skillet Dinner With Rice Noodles
This is an easy chicken recipe that my eldest son threw together one night for dinner. It's simple to prepare and I usually serve it on a bed of Oriental rice noodles, however you can use rice instead if you prefer. The vegetables suggested in the recipe can be substituted to whatever vegetables you prefer to use. While cooking, if you taste the dish just after adding the spices, don't be fooled into adding more. As the flavors blend, this spicy chicken recipe does develop quite the kick. For those that don't like food that's too spicy, just use half of the amount of spices called for. This will serve 3 to 4 people.
INGREDIENTS:
- 3 chicken breasts, cut into 1" pieces
- 2 tbsp oil
- 1 garlic clove, finely chopped
- 1 small onion, coarsely chopped
- 1 red bell pepper, coarsely chopped
- 1 pint mushrooms, sliced
- 1 small zucchini, quartered lengthwise, then cut into 1/2" pieces *
- 1 can cream of chicken soup
- 1/3 cup water
- 1/4 tsp cayenne pepper
- 1/4 tsp chili powder
- 1/4 tsp red pepper flakes
- 1/8 tsp Cajun seasoning
- 1 package cooked Oriental rice stick noodles (or rice to serve 4 people)

* You can substitute broccoli for the zucchini if desired

DIRECTIONS:
- Heat the oil in a large frying pan. Add chicken and stir fry until no longer pink.
- Add the garlic and onion and cook for 1 to 2 minutes. Add the red pepper, mushrooms and zucchini. Fry, stirring occasionally, for 3 to 4 minutes.
- Mix the chicken soup with water. Blend in the cayenne pepper, chili powder, red pepper flakes, and the Cajun seasoning. Pour into the skillet and stir into the chicken/vegetable mix. Simmer for 2 minutes, stirring occasionally.
- Serve over a bed of cooked rice noodles or rice.
