Here's an interesting little bit of trivia... in the United Kingdom and Commonwealth countries (except Canada), grilling generally refers to cooking food directly under a source of direct, dry heat, like in an oven. In the United States and Canada, we call this "broiling." On the flip side, in North America when we speak of "grilling" we mean cooking food on a barbecue, where it leaves "grill marks." In the UK and other Commonwealth countries this would be referred to as barbecuing (a common term that both sides of the ocean use for this type of outdoor cooking).
In any case, any food cooked on a barbeque definitely leaves a distinct and tasty flavor that everyone seems to enjoy. By the way, you can also add dampened mesquite, hickory, pecan, apple, maple or oak wood chips to the top of the coals, which will provide additional flavor to your BBQ grilled chicken recipes.

How To Barbecue Chicken
There are two methods to grill food over a gas, wood, or charcoal barbecue. The first is using direct heat. Place your chicken on a greased metal or porcelain grill directly over the flame or coals. This method exposes the food to very hot temperatures and is the fastest way to cook food items on a grill. However, you will have to carefully monitor your chicken, turning it often, so as not to burn the outside.
The second method involves using indirect heat where you have the fire or coals going on only one side of the grill and then place your chicken on the other side to cook. This is one of the best ways to BBQ chicken, since it allows the food to cook all the way through without burning or charring on the outside of the meat.
